Bacon Asparagus

(Technically, prosciutto asparagus… details, shmetails.)

  • asparagus (different stores sell differently sized bunches, so you know… get some asparagus)
  • “prosciutto di parma” to wrap asparagus (so buy proportionally)
  • salt & pepper
  • avocado oil or coconut oil or ghee
  • balsamic vinegar (optional)

Preheat oven to “really hot” (like 400 F)

Line cookie trays with foil (one or two trays, depending on quantity)

Snap off hard ends of asparagus spears.  Line them up on the cookie trays, drizzle with oil and season with salt & pepper (veeeeeery little salt)

Decide how lazy you want to be – either cut each piece of prosciutto into three long strips, and wrap each asparagus spear individually, or wrap three spears in one solid piece of prosciutto.

For individual spears, bake 4 minutes, turn over, bake another 3-4 minutes, or until the prosciutto crisps and the asparagus is tender.  Repeat with remaining cookie trays.
For tri-spears, bake 6-7 minutes, turn, bake another 3-4 minutes, or until the prosciutto crisps and the asparagus is tender.  Repeat with remaining cookie trays.

Optionally, drizzle with balsamic vinegar and munch away.
